From the very start, a team of international experts scoured geographic data, searching for the perfect place to plant roots—both literally and figuratively. Their journey led them to Huailai in Hebei, a region where nature seemed to have written its own recipe for great wine. Nestled on both sides of the Guanting Reservoir, at elevations ranging from 498 to 1,050 meters, Canaan’s three vineyards benefit from a rich diversity of microclimates, each contributing something unique to the wines produced here.

Canaan Winery, ‘Chapter & Verse’ Riesling 2019

Grapes are harvested at night from Site 16, a high-altitude vineyard (920–1,050m) with silty loam and loam soils, ensuring optimal freshness. Cold stabilization and a 15–20 day thermo-controlled fermentation preserve its vibrant character. The nose is immediately captivating, with flinty lemon, green apples, and white blossoms, subtly accented by a delicate hint of petrol. On the palate, this bone-dry Chardonnay displays precision and tension, driven by bright acidity and crisp minerality. Layers of citrus and nuanced floral notes evolve into a pithy, clean finish, showcasing remarkable varietal purity and a sense of place.

Canaan Winery, ‘Chapter & Verse’ Reserve Chardonnay 2018

Following careful selection, the wine undergoes partial fermentation in French oak barrels, where it spends eight months aging on fine lees. A complex bouquet unfolds with ripe yellow apricots, tropical fruits, and delicate floral accents, underscored by a whisper of vanilla and toasted oak. On the palate, it delivers a seamless balance of richness and elegance, with a creamy texture supported by vibrant acidity. Layers of stone fruit and subtle citrus zest lead to a lingering, nutty finish that showcases its finesse and integration of oak aging.
